Raicho-no-Ren R2 Petty 150mm
This knife has a short blade length of about 9cm to 15cm, and is useful for cutting small ingredients and peeling skins. In many cases, ingredients are held in hand without using a cutting board.
This series is manufactured in Seki City, Gifu Prefecture, and uses R2 steel as the core material, which is resistant to rust and retains its sharpness for a long time. Each knife is handmade by knife craftsman Hiroki Kobayashi, and the blade is made thinner to achieve a sharpness like no other. The shape of the handle is a Japanese-style handle made of plywood and micarta, making it lighter and easier to handle than Western-style handles. In addition, the brand name "Raicho-no-Ren" has the meaning that through beautiful food, gratitude for the blessings of nature, and receiving a precious life, a pure heart like a lotus flower will bloom. This product was broadcast on "NHK's World Japan".
