Sakai Kanechika GIN3 Hontanren Nakiri 165mm
A knife with a blade length of approximately 160mm to 180mm for cutting vegetables. It has a rectangular shape, and the cutting edge has little curve to cut straight. Because leafy vegetables are thick, the blade of a nakiri knife is wider. You can also cut root vegetables without breaking them.
Manufactured in Sakai City, Osaka Prefecture, this series uses rust-resistant GIN3 stainless steel as the core material. The characteristic of the Sakai Kanechika Gin Sanbon Forging Series is that it is made using a forging method called "Hon-Tanren" which is extremely time-consuming and requires the skill of the craftsman to create the shape of a knife by hammering out a small piece of steel. This knife was carefully sharpened one by one by Mr. Keiichi Fujii, a knife craftsman with a history of three generations in Sakai. The shape of the handle is Japanese-style and is made of natural wood, making it lighter and easier to handle than Western-style handles.
