A single-edged Japanese knife for cutting fish. The thick base of the blade makes it possible to cut bones and remove heads, and the tip of the blade can easily grate three pieces. Choose the size depending on the fish, with popular sizes ranging from 5 sun to 5.5 sun (approximately 150mm to 165mm). The main lengths are 3.5 sun to 9 sun (approximately 105mm to 270mm).
Manufactured in Sakai City, Osaka Prefecture, this series uses SK steel as the core material. SK steel is the steel most commonly used when making steel knives, and is characterized by being sticky among steels and less likely to break compared to white steel and blue steel. After being forged by hand in Sakai City, each one is carefully sharpened by Fujii Keiichi, a knife craftsman who has continued for three generations.
