Raicho-no-Ren R2 Sujibiki 270mm
A knife suitable for cutting meat into thin pieces. Due to its length, it is often used for cutting, and can also be used to thinly cut soft vegetables such as tomatoes, fruits, and fish fillets. The main length is approximately 210mm to 300mm.
This series is manufactured in Seki City, Gifu Prefecture, and uses R2 steel as the core material, which is resistant to rust and retains its sharpness for a long time. Each knife is handmade by knife craftsman Hiroki Kobayashi, and the blade is made thinner to achieve a sharpness like no other. The shape of the handle is a Japanese-style handle made of plywood and micarta, making it lighter and easier to handle than Western-style handles. In addition, the brand name "Raicho-no-Ren" has the meaning that through beautiful food, gratitude for the blessings of nature, and receiving a precious life, a pure heart like a lotus flower will bloom.
