Sakai Kanechika VG10 Maho Kobunka 140mm
It's a versatile knife, but it's a slightly small cultural knife with a blade length of about 140 mm. It can be used universally with meat, vegetables, and fish, and can be cut in a variety of ways, such as shredding or mincing.
Manufactured in Sakai City, Osaka Prefecture, this series uses rust-resistant VG10 (V gold 10) stainless steel as the core material, and has been carefully sharpened one by one by Fujii Keiichi, a knife craftsman who has continued for three generations. The pattern is Western-style, using mahogany-style plywood, and processed into a shape that fits easily in the hand. Also, although it is a Western-style pattern, the core is only halfway in, so it is lighter and easier to handle compared to other Western-style patterns.
