Sakai Kanechika AUS10 Damascus Gyuto 210mm
A versatile knife known as a chef's knife overseas. The shape is different from Santoku and Bunka, and the blade length varies from about 170mm. The main length used at home is approximately 210mm to 240mm.
This series is hand-sharpened by Mr. Keiichi Fujii, a knife craftsman in Sakai City, Osaka Prefecture, and uses AUS10, a rust-resistant and wear-resistant stainless steel, as the core material. The Damascus pattern on the surface consists of 17 layers including the core material, making each knife a beautiful knife with a different pattern. The shape of the handle is Japanese-style and is made of natural rosewood, making it lighter and easier to handle than Western-style handles.
